Monday Meal Planning


The week ahead has me a little anxious.  We have an event, and sometimes two, every day this week.  It looks a little something like this:

Monday: soccer (Camden), hockey (Carson)
Tuesday: baseball (Jonah)
Wednesday: basketball (Jonah)
Thursday: art exhibit (Carson), basketball (Jonah)

By Friday I think I'll be sleeping through movie night.  It's on weeks like these that having our meals planned out is imperative.  Flying by the seat of my pants when it comes to mealtime on a busy week means more drive throughs and less healthy choices.


Since I was out of town this weekend, I didn't have a chance to do a big shopping trip, so I decided to take stock in what was already in the freezer, and make a quick stop at the grocery store on Monday to fill in the gaps.

When I took a look in our freezer, I saw pork shoulder, chicken shortcuts (Justin buys these for his salads) and ground beef.  Time to make a plan...

Monday: Chicken Enchiladas, carrot sticks and cucumber slices


Chances are we will have about 30 minutes to eat, between soccer and hockey, so this is an easy meal to prepare in advance and just pop in the oven when it is time to eat.

Tuesday: Better For You Baked Mac and Cheese and asparagus


I used to add peas to step 3 before I poured the pasta and cheese into the prepared dish, but little man has figured me out.  So, this time, I am going to try adding pureed squash.

Wednesday: Slow Cooker Pork Tacos, applesauce


Thursday: Leftovers!  I love planning meals like these for the beginning of the week because by the end of the week (especially a week like this one), I am usually too frazzled to cook.  The boys like having their pick of what they can eat and sometimes I just throw together a big salad for myself with the leftover fruits and veggies from our meals.

Friday: Beef Tacos 

I will prep this meal at lunch time--see The One Handed Cook for how I make the witching hour less stressful.  The recipe I shared is for chicken tacos, but my kids prefer beef, so I will brown the beef during lunchtime too.
