Menu Planning Monday

I am really bad about "reinventing the wheel" when it comes to weeknight meals.  There are SO many things I have enjoyed about "menu blogging," and one of the biggest things is that I can look back to a previous week to help me plan.  One of the other advantages of blogging is that I don't find myself in the grocery store every day of the week.  I just go once, Sunday or Monday, with my menu plan in hand.

OK, maybe I found myself in the grocery store more than once last week.  I was there on Monday.  And then again on Wednesday.  And oh, yeah on Friday.  Ugh!  Last week was not a good week, planning-wise.  But it wasn't because of dinner, it was because of breakfast and lunch.  So, I have found out I am pretty good about having a plan for dinner, but not so good about the other two meals.  I'm working on that.  And it starts this week.

Camden absolutely loves the lasagna I make in the microwave, and I feel good about it because it has spinach in it, so I know he is getting a serving of leafy greens, and a serving of tomatoes in the sauce.  So I am going to make the lasagna on Monday and he and I can eat it for lunch a few times this week.

Now on to the dinner plan...

Macaroni Monday
Chicken Nuggets--I am going to try these, but instead of using breadcrumbs, I will use corn flakes (tip from my sister, the cook who doesn't ever follow a recipe :).  I want to be more like her!!!

Taco Tuesday
Baseball night!  Last week I tried to get too fancy on baseball night and wound up feeling frazzled by the time we got to the ball field.  This week, I am doing something simple.  My boys love Trader Joe's fish nuggets and we like them too.  They will have fish nuggets and leftover mac and cheese before the game, and Justin and I will make fish tacos when we get home.

Fish Tacos
Stuff a corn tortilla with two fish sticks (cut into bite-sized pieces), broccoli slaw, and special sauce.

Special Sauce: Mix 1 cup ranch dressing with 1 chopped jalepeno pepper, 1 Tbsp chopped cilantro, and a generous squeeze of a lime.  This recipe also came from my talented sister and brother in law, whose names you may see on the cover of a cooking magazine one day. :)

Slow Cooker Pork Tacos

This is all you need.  Seriously!  The only thing not pictured is the cilantro.

We like tacos around here!  How else are we going to use up all our cilantro?!
