Meal Planning Monday


When Justin and I were first married, we got tired of planning meals and trying to be creative each week.  So we came up with a plan.  Macaroni Monday, Taco Tuesday, Wiener Wednesday (terrible, I know)...you get the idea.  I decided to revert to our old ways--somewhat--and do the same this week.

I wish I could say I came up with these recipes, but they are just ones I have collected.  I like Parents magazine recipes a lot.  I clip them and keep them in a three ring binder, sorted by type.  So, when I need a chicken recipe, I just go to the chicken tab and see what looks good!

Part of the reason I decided to do this Monday post was to challenge myself to plan healthy meals.  And you'd never guess, but I also want to provide a variety of meats and veggies for my boys.  I might have a problem with variety this week.  What can I say, my boys are big on pig.  I'll do better next week.

Macaroni Monday

Better-for-You Baked Mac and Cheese with peas added in (have to hide veggies from my littlest boy)
Mixed Veggies (I buy the enormous bag of frozen organic mixed veggies from Costco)

Taco Tuesday
My boys love anything with pineapple.  And Justin and I love anything with cilantro.  So when I saw this recipe for pork tacos with cilantro and pineapple chunks, I was sold.  And I can pop the pork shoulder in the crock pot with a can of tomatoes and some spices and call it done?  After the first time we made this dish, we knew it would become a regular.

Pork Sandwiches (with leftover pork from Tuesday night) on Hawaiian Sandwich Rolls

Great Wolf Lodge!  I can't even begin to guess what delicious and nutritious meal we'll have this night.

I am sad not to have pictures to accompany all my meals, so I will be sure to take a few this week and add them to the post.

Sometimes I have to get creative to encourage my boys to try new things.  So, one night we created awards for Most Colorful, Most Adventurous, Healthiest.  It was fun, and it really did work!
